Great product and shelf life
Great product! I use this koji rice for making miso. It works great as ND saves me the step of making it from scratch. I had one package over 3 years old that I found when cleaning my cupboard. I used it to make a quick tasty paste recipe I found in the Shockey's Miso • Tempeh• Natto book- worked great! Ordering more today!

Great food product too!
I bought this initially so that I could make my first homemade sake, but I ate it all instead! Lol! I really love experimenting with cuisine, and I so I decided to try out partially reconstituting it with water. I then fried rectangular pieces in spiced sesame seed oil, and topped them with a dab of siraccha under pieces of raw sushi-grade tuna rubbed with cilantro and rice seasoning. Yum! I really love how these malted rice cakes hold up in the cooking process! The Koji does something amazing that gives the rice an interesting flavor as well as it binds the cake together. My little weird crunchy nigiri came out so good!

I learned how to make amazake while I was in Japan this May. When I returned and searched Amazon, I found the essential ingredient Koji which you were selling. Lucky me! I made a few batches of amazake using my rice cooker's keep warm function. It is so easy. Cook one cup of rice /brown rice with three cups of water (Japanese cup size of 200 cc so I use rounded 3/4 cups with 240 cc cup rice and add extra water). Wait until cooked rice becomes about 60 c degrees, mix 200g package of crumbled Koji. Do not cover with the lid. Just spread a wet cloth over the rice cooker and set the time for 10 hours. Stir twice during the fermentation period. YYou can smell the aroma after five hours...That's it! Finished amazake has a consistensy of oatmeal. I like to eat them as they are (one serving of 2.8 oc is 81 calories), but you can add hot/cold water to make it a drink. I am not so ambitous to make miso or other foods but I am going to experiment with different grains and see what happens. Thanks for making this available in the USA. It is almost three times the price in Japan but imports always are expensive. So I cannot buy it all the time but it is nice to know the product is available.

Little pricy
I made miso out of the koji and cannot tell the quality till another 12 months. But I can say that my math is telling me my miso gonna cost me more than the retail miso thanks to this pricy koji.

Great for making Amazake

Der Koji Reis wird aus Japan geliefert und entspricht dem, was man dort im Supermarkt kaufen kann. Ich habe den Reis zur Herstellung von Sake verwendet, wozu man weiteren gedünsteten Reis mit diesem mischen muss. Die in diesem Produkt enthaltenen Pilzsporen (Saccharomyces oryzae) sind lebensfähig und man kann den eigenen Reis damit fermentieren. Ähnlich wie bei europäischem Schimmelkäse bildet sich ein weißer Flaum. Nur das hier die Reisstärke zu Zucker abgebaut wird und sich ein schönes fruchtiges Aroma (u.a. Lychee) bildet. Der so vorbereitete Reis kann dann mit Hefen weiter alkoholisch vergährt werden. Außer für diesen Zweck kann man den Koji Reis natürlich auch für andere kulinarische Zwecke verwenden.
