On a July morning in 1801, the citizens of Cheshire, Massachusetts, pooled their cows’ milk in the town’s cider press, producing a four-foot-wide, 1,235-pound wheel of cheese celebrating the Federalist defeat. That winter, as the cheese made a three-week journey by sleigh to the capital, crowds turned out to see it. The White House served the mammoth cheese, as it came to be known, on New Year’s Day, and for the next couple of years. Great Book
GREAT BOOKThis is a book I will use daily to make cream cheese, sour cream, yogurt, butter, buttermilk, soft and aged hard cheeses, not to mention keifer and whipped cream. I have a Jersey cow and herd of milk goats but dairy products you purchase in the store can be made at home using store bought milk.

Although browsing through the cheese shop can be a fun and satisfying experience, it can also be a costly one! "The complete dairy foods cookbook" will give you the A-B-Cs on how to make your own soft cheeses as well as other dairy oriented dish. A must for all those seriously self-sufficient cooks.
