Sometimes I grate more than I need for one meal and then keep the grated bottarga in the freezer, so it's ready for an instant meal...sprinkling it into hot pasta is enough heat to bring the flavor back up. **Q: How is this product salted but the nutrition label says zero sodium?** A: Well it’s cured. So it definitely has salt. Not sure why the label says that. But it’s not so salty that you can use it as a salt substitute. Especially since you’re only going to be using small amounts to begin with. **Q: Is it still usable once the color changes to a dark grey??** A: YES!
