Silpat Premium Non-Stick Silicone Baking Mat, Half Sheet Size, 11-5/8 x 16-1/2, Orange

I have owned my Silpat mats for over 10 years now. SILPAT is the brand you want. It was made in France and is a silicone mesh, very well made. The first thing you do when you get it is wash it with dish detergent. The second thing you do is put it on a pan alone in the oven for 350F. It needs to outgas for the first time. After that first time, the only thing you do is make sure your temp is not too high, and DO NOT CUT ON IT... The only way I lost my mats was when someone tried to cut the food item while still on the mat. If you cut it, you need to throw it away. I cannot remember a time now, when I do not bake cookies or bread without my SILPAT. Doing otherwise is just silly to me now. I also use it for rolling out cookie dough or biscuit dough on the table. Nothing sticks to it. The food comes right off. The wash is a simple detergent wipe and rinse. Mine has minimal residue from over a decade of baking, but it has not harmed the performance one bit. I roll it up when dry and stick it in the drawer. I would NOT buy another brand, even if it cost half as much. SILPAT from France is one brand I am comfortable with as safe and WELL worth the money. (And I might add that the price has not gone up in those ten years....)

These are the best. Lightweight , easy cleanup , pleasant appearance? , although I try to spend as little time in the oven as possible and they work great and don't affect browning either (on the bottom).

Forget about aluminum foil, waxed paper, parchment, etc. for lining your pans. Buy one of these, and you'll only be messing with those things when you want to cover up your food or cook something "en papillote". As nonstick as it gets, doesn't seem to retain flavors, and unlike the cheap(er) imitation brand ones I've gotten from a local restaurant supply store, mine has not peeled a bit in over 2 years of hard use, including harsh broiling right under the element. I use these just about every time I bake, and they both make cleanup a breeze, and have saved all kids of dishes that I would have utterly ruined by trying to lift out of a sheet pan with utensils. You can just lift the mat, slide off the delicate/messy food onto a platter, et voila! - dinner she is saved. As a testament to how badass these things are: I once gave my dog a ham pan to lick out. He ended up tearing up a quarter of my Silpat thinking it was bacon! After making sure he didn't need to go to the vet (he was just tearing it up and spitting it out, the clever, destructive little bugger), I took my kitchen shears and cut the torn corner off, leaving a clean cut but some definite sharp edges that I was worried would fray. One year later... looks the same as it did when I cut it. That's a truly sturdy mat, right there. My friends also love using the extra-large ones for rolling out pastry and bread dough - non-stick, minimal mess, easy cleanup.

I do not use this mat for cookie baking, however, I know many people do and love them. I use it primarily for pie shells, bread dough, etc when rolling out. I love this product, have given them away to people I know. They are easy to use, easy to wash, easy to store. The smallest one is a bit small for my needs so I have a larger mat and I would recommend that one if you roll out very many things like pie dough's. To preserve it, do not cut on it and I am sure it will last a long time.

I absolutely love this mat! It does an amazing job stopping my cookies and other baked goods from sticking to my baking sheets, and it seems to make no difference in terms of cooking time or the final result. It is an excellent alternative to parchment paper, and cheaper in the long run. The mat is also very easy to clean. With just a little bit of soap and water even baked on grease comes right off. I love the mat so much that I've bought a second--one I use for cookies and other sweets and the other is used for meats and other savoury items. If the mat is properly cleaned there is no transfer of flavours, but it make me happy to keep the two separate anyway.
