Ceylon cinnamon is generally thinner rolls with more layers, with a weaker aroma and taste, but also a somewhat different flavor. More importantly it has dramatically lower levels of coumarin, so is safer to eat in larger quantities. I've tried a few brands of Ceylon cinnamon and so far, this has been the freshest with the strongest odor/flavor (though still less than Cassia, of course).

These are the most substantial and fragrant cinnamon sticks I’ve found. If comparing to the big brands, you will usually find single bark layers, curled as usual and generally hollow. These are multi-layered and densely packed sticks. In other words, you’ll get fewer pieces but there is much more to them. You may need to consider reducing the size of the piece you’re used to using because there is much more in the same length of these sticks. Where I would use a whole piece of standard cinnamon stick, I might use 1/3 to 1/2 of one of these. I also think they are a good bit more fragrant and fresh than those available at the grocery store or from major brands. I will buy again—highly recommended.

I've purchased this several times and I will probably buy again. It's a milder flavor cinnamon than the Cassia cinnamon that you buy everywhere. Cinnamon is good for your blood sugars.
