Calcium Lactate is used for Reverse Spherification, Calcium Chloride is used for direct spherification. We do also offer a sodium alginate + calcium chloride value pack.

What is the origin of these products?

The packaging does not specify, but it is distributed from comapany located in Maine.

Does it come from alga?

Sodium alginate is extracted from brown seaweed. It exists naturally in the calcium form and is what holds the seaweed together. During processing it is converted to the more useful (soluble) sodium or potassium form.
