Q: What guage (sheet thickness) stainless is the prep top & bottom shelf?

This product is pure crap.All welds were rusty,edges were very sharp.Picture is very deceiving,it shows the lip along the back of the table but it's along the side.

Q: Is there a way to increase the height?

If you don't use the wheels the feet on them increase some but the wheels make the table taller. If you want a taller table you might have to look at an bar style.

Q: Manufacturer: do you offer 48" worktop with casters & 2 under shelves (depth & backsplash optional) or would it require casters ordered as add-on?

Do not buy this crappy table. Very very poor quality and dinged up. It's not the table u think it is.

Q: How do you remove the white plastic covering the stainless steel table tops very hard to remove what’s up peeling it piece by piece

I had no trouble peeling the white plastic off, if it wasn't there the surface would be scratched
