Q: Is the version of this called "creamer" the same formula except that one has added sugar and this doesn't?

It does not contain sugar. Be advised it does mix well in your coffee.

Q: Has a fermented yogurt type smell mixed with coconut. Concerned that it is fermenting or spoiled?

That doesn’t sound right. I’d send it back

Q: How do you seal the bag? It has a weird white strip that will not attach to each other!

I had the same issue, so I put the bag inside of another ziplock bag.

I don't know why its unsweetened. The other one I had with the surfer on the package. It worked well with my coffee both nutritionally and physically.
