Yes, the spatula does flex, and it works quite well. It may not be quite as soft as the old ones. But I suspect that one reason is that over time the rubber softens. So when you compare the new one with the old one, they will be different.

So, is the handle "sturdy"? I hate when trying to fold a heavy batter/etc if the handle bends or is flimsy.

I've not had a problem with them folding batters. Very sturdy. We have a silicone spatula that is like that. Flimsy. That's one of the reason's I like these. They clean well and have good handles.
