I didn't realize it was cooling but since you mentioned it, I do believe it is. The only thing that makes me too warm is my pillow - I need to get rid of that - and my dogs!

If I am understanding your question correctly, i don't think I would cut this mattress topper. If your mattress is un-level perhaps adding a board underneath would be a better fix?

As long as your sheets are good fitting, the mattress pad does not look sloppy or cause the bedspread to look sloopy.
