Grown and milled off the coast of Africa, if unfamiliar with the product, Moscovado is s partially refined sugar with high molasses content. I use it as a substitute for light brown sugar, but mostly wherever dark brown sugar is normally used. It is exceptional in ginger cookies which are always better when augmented with bits of candied ginger, and is an excellent addition to chocolate chip, gingerbread, chocolate, pumpkin and even peanut butter cookies along with similarly flavored cakes and muffins. It is best in baked goods with strong flavors or it may overpower something subtle like a butter cookie. It is also delicious as a sweetener for coffee. The texture is slightly moister than standard brown sugar, but not to the degree that liquids in a recipe needed to be adjusted. If familiar with molasses this is bordering on the deepest blackstrap variety where it is a little less sweet and has an almost slightly burnt sugar flavor. Infinitely more complex than regular or light brown sugar, and far exceeds regular dark brown sugar with greater intensity and depth. Just like regular brown sugar, if not kept air-tight the sugar can harden. This is easy to remedy by using a brown sugar saver or one of the usual solutions (search internet) like a slice of apple, etc. to keep it moist. Because of its cost, it is usually a once-a-year indulgence reserved for special baking, like the holidays. Shelf stable, the tub I purchased in my prime pantry box has a “best by” date 34 months in the future.

I've made chocolate chip cookies for decades. You know the recipe from that brand of chocolate chips. I wanted to make cookies, didn't have my usual brown sugar but I did have this fancy sugar so I used it in the cookies and took them into work. I had people chase me down for the recipe. This was the only thing that was different and it made a huge difference. Not the cheapest thing in the world but when you want your recipe to taste very special with extras layers of flavor, this muscovado sugar is it.

There is no better dark sugar on the planet. Use for cookie recipes, oatmeal topping, syrups. One must take extra steps to preserve freshness if not used somewhat in bulk and quickly. Cannot recommend more highly.

Muscovado is the best sugar to use for Alton Brown's lacquered bacon recipe (which you REALLY NEED to try!), but I literally checked EVERY grocery store in SW Idaho, and none of them had even heard of it, let alone carried it. I had tried another brand of muscovado from Amazon, and it was fine (better than regular brown sugar, anyway), but lighter and less moist than this stuff. This stuff is AMAZING. Really moist, really dark and rich with that molasses flavor that is a major reason to buy muscovado. Plus, the screw-top lid seals SO much better and easier than any zip top bag, which is really important for any kind of brown sugar-type product.

Delicious molasses flavor, but overpriced. It is hard to find Demerarra sugar right now, which is cheaper but less flavorful. I will only be using this sugar for special occasions and treats.

I love this sugar! It has a lot of dark almost toffee like flavor, as a matter I used it to make some toffee sauce for a cake. It's amazing in coffee and oatmeal. We have loved it in every application we've tried. I bought one of the lighter brands as it was a little cheaper but it didn't have the same flavor at all. This one from India Tree is the best and this size is actually a very good value. I will definitely be buying this item again! the packaging and shipping was great and I am very happy with this seller.
