Q: Will it fill a paddle board?

Q: Does this come with an option to add a stand up paddle board inflator?

No. This isn’t intended for large volume inflations and long durations of continuous use. Search inflators that are rated for aquatic devices. This unit is best suited for tires and relatively small and low pressure sport gear like soccer balls ⚽️

Q: Will it work plugged in to a USB C port of a car? It charges by USB I gather?

It does charge through a USB, so I would think the source such as from a car would be irrelevant. Never tried it from the car USB but pretty sure it would work.

Q: Works fine. However, I lose a fair amount of pressure when valve chuck is opened and removed from tire valve. Does anyone have a resolution to this?

i use the thread-on hose for filling car tires (the flip-lock Schraeder valve chuck is something I would only use for bike tires, toys, etc). Yes you can hear some air escape while threading it on or off of the valve stem, but it's very momentary, only for about one turn of the threaded adapter. I also always set inflation pressure to 0.5-1.0 psi higher than my target pressure anyway - even when using commercial air filling stations. Based on the TPMS readout from my car (actual pressure, not just "OK" or "LOW"), I'm not really losing anything of significance when unscrewing and detaching the hose from the tire.
