I'm really nervous about drilling the bottle as I only have one and it's limited edition - is it easy to do?

I was nervous, too. I bought some glass drill bits, a 6mm and a 10mm. Turns out it was very very easy. Since I did NOT want my mains powered drill anywhere near running water (as suggested when drilling glass), starting with the 6mm bit I held the bottle gripped between my knees and slowly drilled, then poured water, drilled, poured water...same for the 10mm. Took no time at all. Use a single strip of masking tape where you want the hole to help stop the drill bit slipping (which it will do).

Will this suit a Harris Gin bottle

It depends on the size of the neck. I used a Bombay Gin bottle and the bung expands to fit nice and tightly. As it says it fits from 19 -21 mm bottle neck openings (inside measurement) so you will just have to measure your Harris Gin bottle. Decant the gin into a spare tonic bottle if you don't want to drink the gin first.

Would this fit a standard champagne bottle?

Yes I think it would. We used it on a gin bottle. You can measure the opening of the bottle to see if its between 19 and 21mm.

Is this easy to wire at the top? Are there instructions?

It is very easy to connect the wires,there are only 2 and it does not matter which pole you connect them to. If you have 3 wires , just remember the yellow/green wire is the earth.
