is this suitable for canning meat and fish, if not, do you make one that is?

It isn't marketed as a canner but the Ball Blue Guide to Preserving (metric edition) gives instructions for canning using a weighted gauge device, like the Hawkins. If you follow the instructions to the letter you should be able to can meat and fish safely.

Can this be used for Canning ?

Yes you can. Be carefully when buying this item. We found that after buying it we had a bill of £24 to pay on deity tax.

Does this model come with a removable base plate or do I need to buy the larger one??

There is no removable base plate but it is very big
