FireDial in my Weber Smokey Mountain is a game changer! I should have replaced the water pan years ago. With the FireDial, there’s no messing with a heavy water pan. The meat is not steamed. It’s smoked very well. I just finished two racks of baby back ribs, and they were the best that I’ve ever made! Temperature control was amazingly consistent. I was at 250° for the entire cook. The best part is that after my cook, I don’t have to clean a dirty and heavy water pan.

The water bowl hangs too low to add wood chunks or coals mid cook on the 18” WSM. This solves that problem. I’m able to control the temps just as well with this as a bowl full of water too.

This heat diffuser is the best accessory I have for my WSM. It replaces the water pan with something that is more convenient to use, requires no maintenance or cleaning. It is also very well priced. I also find that it improves the taste of the food when compared to the water pan, as the juices that fall on it vaporize and flavor the meat.
