Yes they are stainless and they have a protective coating on them. They're nice.

How do I sharpen the knives without scratching the black off?

I purchased a countertop electric knife sharpener from Amazon and it works very well.

How does the finish hold up long-term?

Although the product was cute, it’s made from acrylic, and is extremely flimsy. It wouldn’t not hold more than six months to a year if used regularly.
