Is the canopy adjustable so you can keep sunlight out of your eyes?

No. The canopy is either engaged in its fixed position over your head, or disengaged around the back of the chair.

Does the canopy fold down or back if I don't want shade?

Yes, it's easy to fold back behind you even while sitting if you don't want shade or weather protection. I got the chair (maybe 8) years ago and accidentally left it at an out of town soccer tournament. I ordered a new one right away because no other chair compares. Wouldn't be without it!

How many inches from the seat to the ground?

I had the very first chair I guess. The canopy was a paracheute type that wasnt fixed to the chair. Is this just as good as the original?

I did not have the first one but I think this chair is great! Durable and can hold weight and is light enough for my kids to carry.
