It's brine. You'll see in the ingredients list of the photos. Brine is no more than salt water & the contents here is 27% sodium.

I am not sure what you mean by stinky. It smells like can food, like artichoke or hearts of palm. Or are you comparing it to the actual fruit? The fruit (not from the can) smells sweet.
