Can you recommend a door I can purchase to use with these tracks?

We made our own doors. We needed an odd size.

Know where I can source a plastic track for 5/16" thick frames?

I do not, however I have used 1/4” track with 1/2” thick doors by milling the front face of the front door and the back face of the back door. Hope that makes sense/ and works for your application
