Adding this gluten creates a more consistent, open quality in the final bake. More pocketing in our sourdough recipe. You’ll see a thin, transparent gluten “window” when you stretch a piece of the dough after just a few minutes of kneading.

I live in a tropical climate where the locally-available flour lacks sufficient gluten to bake decent loaves of bread with nice crumb texture. I typically add about 1/2 cup Vital Wheat Gluten to each 4-5 cups of flour to help fortify the dough with the extra gluten.

Great product for a good price. Very finely ground, worked great for seitan! Will be buying again :)

This is of great quality as I mixes well and provides a great texture. I use it for protein pizza.

Honestly, what can you say about gluten? It is what it is. If you like the price, then buy it. It's decent quality.

I go through a bag of gluten pretty quickly, as I regularly bake rye bread. The store where I usually buy my gluten was out, so when I got home I looked on Amazon for a brand that got good reviews, was not too expensive and could be delivered quickly. This gluten checked all those boxes. It performed well in my baking, so I would order again.

Even before I can use the product the bag had a small opening, the flour for on all my other items purchased in that shipment, the integrity of the product is compromised so I can't even use it to give an actual review on the product, very disappointed.

When all flock away, I am drawn in like a moth to a flame. GLUTEN GLUTEN GLUTEN! It's the bee's knees.
