Updated review, orig below I bought this to replace my 45 year old white professional 'S' paring knife i have used multiple times a day for all these years. My old paring knives (3" and 4") are still in excellent shape, but do show their age. So time to spruce the set up, i thought to myself... For the first 3 months the knife never kept an edge more than half an hour, prepping a greek salad was enough to dull the thing. I was not impressed, and left a 3 star review because of it. Now 3 months on i had resharpened the knife on a wet stone after a couple more weeks, and now the knife is just fine, and keeps its edge for roughly the same amount of work that my old professional 'S' paring knives did, I am guessing the original knife as shipped had a metal flaw at the edge, and once i ran it on the wet stone enough, i have come to the good steel. I will chalk it up to a minor mistake at the Zwilling QA dept and leave it at that. So now the knife performs as i would expect a professional grade paring knife would. The handle and blade are larger/thicker than my older ones, and the extra heft is nice when chopping etc with it instead of the chef's knife. The handle seems nice, and i do expect it to last well, as my other Pro knives have held up as well. However this new paring knife does not hold an edge at all well. I have to run it over the sharping rod every day, and frankly i only had to do that with my 45 year old paring knives once every few weeks. I am using it exactly the same as i used the old ones. Lets see i sharpen it, i slice and chop a red onion, peel and chop a dozen cloves of garlic, and process a bell pepper. Now i want to slice up a semi-ripe tomato, the thing it too blunt to cut through the skin. I have to resharpen it. I switch back to my old paring knife and have no issues. So in short i am not impressed at all. Now to be fair, i have a few other Zwilling Pro knives stuck in my collection of 45 year old Henckels. The Pro chinese veggie cleaver is great, very strong, and keeps an edge like crazy. I use it for peeling and processing kabucha for example, keeps the edge and keeps on working for ages. The Pro bread knife is great, sharp and works very well indeed. So i am debating if i should just return it or not.

Best Knives For Your Money!
I’ve recently gotten into baking hearty, thick crusted sourdough breads, and I didn’t have a knife adequate enough to cut those beasts. Additionally, I have arthritis in my hands and needed a hefty serrated knife that would effortlessly slice through these loaves. This is that knife! At a length of ten inches, it wields perfectly. Zwilling Pro makes excellent quality, high performance knives (I have many). With a full blade tang and a comfortable, well-balanced grip, this knife allows for durable precision cut accuracy. Yes, these knives are a little pricey, but you truly get what you pay for with this brand! Zwilling Pro knives will literally last your entire lifetime if you take proper care of them, and become heirloom pieces. The most important rule of good knives: *DO NOT EVER PUT THEM IN THE DISHWASHER!* This will destroy every good knife. Guaranteed. Happy slicing!

This is a great multi-purpose knife.
This is a well-made, large chef's knife. It's sharp, and very sturdy. It wasn't cheap, but well-made, good knives aren't. So this was a good buy because it's doing an excellent job with all different kinds of food prep.

Have been using it for a few year now. The edge is still good. The length is just good for daily use. Easy to sharpen as well.

Makes prepping a hundred times easier!
I bought the 7" chef's knife rather than the 8" because it was on sale for about half the price of the 8". If you have large hands, you may prefer the 8" though my husband is fine with the 7". That said, I'd probably have a teensy-weensy preference for the 8" myself, but other than that this is by far, and I mean by miles and miles and miles, better than any chef's knife I've ever owned. It's sharp & cuts through veggies easily; easy to hold & wield. I haven't had to sharpen it yet & that worries me a bit because I'm not sure what the best sharpener is for this knife. I now actually look forward to chopping veggies instead of struggling with the horribly dull 8" Mercer I bought and could never get sharpened at all. Do yourself a favor & buy this knife. It will last a life time (great craftsmanship btw) and make your time in the kitchen much more fun!

Good knife
My review of the Zwilling Pro Le Blanc 7" slim chef knife. I bought this knife for my wife. It's a high quality 4 star -but not 5 star- knife. This knife cuts OK, but not 'incredibly good'. Handles well in use slicing and rock dicing veggies. HOWEVER 7" is definitely short in comparison to 8" which is the kitchen standard. Our 8" is a much better overall length then 7". The squared handle slim design stays put in use for light work. But for heavier work prepping lots of veggies and meat for say a pot of stew or soup a full sized 8" knife handle is better. This is a slim knife and its very easy to use a pinch grip just in front of the handle for fine work. It will fit small hands very well. I have med lg hands and it feels a bit too small. Since I bought this knife for my wife, upon handling it I found the handle a bit too square and sharp edged. I rounded those over very slightly with my diamond stones. After three months of use I have found the blade steel does NOT hold the edge I expected it to. I have to regularly touch up the blade with my red (fine), or red and then green (extra fine) DMT diamond stone. And this knife is ALWAYS used on a wood or plastic cutting board. 4 star knife, not 5 I was expecting. But I'm not a pro chef either so there is that. I like using the knife. BUT, for big prep work I grab my 8" chef knife.

Beautiful and very sharp!
I had already bought the larger knife (chef's knife, I think it is called) and saw how fine and sharp the edge was. Bought 2 more for my 2 sons. When I saw the paring knife, I got one for myself. It is very sharp, and the white handle stands out among the other knives in my knife drawer. It is a little longer than most of my paring knives, but that's okay because it gives me the option of using it on larger items. For example, I used it to easily slice a chicken breast horizontally into 3 filets. I wish it came with a knife guard, because now I need to buy one for this size knife. Recommend.
