How deep (or tall, or thick?) is the part that goes through the hole? My desktop is 1" thick, and I need it to NOT extend below the bottom.

You're good. It's only about 3/4" thick. Very happy with it BTW. High quality.

Do it come apart so I can get a computer monitor end through it?

It does. It's two separate pieces. Makes it very easy to add as many items as you see fit. The item itself is also very sturdy and very nice. I have purchased two of them!
