What is the smallest increment? In other words, does it show fractions of a degree (such as 83.4 for example)?

It shows tenths of a degree. ie: 99.9

How much current does it draw at 5v and 12v? Or just how much power does it consume?

I use a 9v battery. Depending on how many segments are lit, it draws between 6 and 7ma, which puts the power draw between 55 and 66 mW.

Will this meter read less than 0 degrees Fahrenheit with a different probe? I want to measure the temperature of my freezer down to about -5° F

I don't know. My assumption is that the sensor is fine with <0 temperatures, but the electronic unit won't deal with the lower temps.

How long is the probe?

About 10 inches from the body of the unit. I extended the wire for my probe by several feet by soldering the connections and using #16 wire. I also preserved the polarity of the connections.
