Are the princesses printed on both sides?

No, unfortunately not. They are single sided.

Would this work as a sheet cake topper?

It is heavy cardboard and a bit coated with UV coating, and could possibly be used for a cake topper. It might fit on an 11" x 9" cake pan, but larger would be better. I used this for just a decoration for a Princess Tea Party and then gave it to my granddaughter for play, like paper dolls. Depending on storage, it will last a long while. Unless the cake frosting is laden with fat (buttercream), it should hold up well. I would think the icing will discolor the bottom of items but if not on long, then it should be okay. It is constructed well and larger than I had anticipated. The coloring of all of the graphics was done very well.

Does this have instructions for putting the castle together?

It doesn’t come with instructions. You just pop it open and everything stands on its own. The castle is all 1 piece.
