Almost perfection.
Great pan but the first two arrived badly damaged even though the packaging showed no sign of any damage or mal-treatment. Are Mauviel in France sending Amazon UK their seconds?Third pan arrived and I used it only to then find that one of the handles were ever so slightly loose, it seems to have tightened up by itself for now but maybe it's just a bit of marmalade in there.The sides are thinner than I expected but that seems to help prevent the tide mark from crystallising.The larger 44cm size is perfect for two cans of Ma-Made Seville oranges (It's July, Sevilles don't come into season until December so forgive the 'tinned' approach. Ma-Made is in fact also very good)The thermometer I used (Jam Sugar Confectionery Thermometer Stainless Steel by Tala http://www.amazon.co.uk/gp/product/B000EUKOJS ) when hooked onto the rim and resting on to the bottom of the pan was ideal, with the marmalade coming to exactly the "level to here" mark. It's an accurate thermometer but the copper allowed the set to come at two to three degrees below the set temperature. That means: a) Less stirring. b) More flavour c) Potential for less sugar or perhaps less pectin depending on the preserve.Remember though; it's unlined copper so isn't suitable for acidic foods like chutney.

I wish I hadn't waited so long to buy this
I can't believe I didn't buy this sooner it is absolutely fantastic for making jams. Compared with the pan I previously used I have found it cuts down the time needed to reach setting point.I would recommend wash, dry and polish immediately after use and invest in some Mauviel Copperbrill to keep the outside looking gloriously shiny.If you want a pan in which you can also make chutneys and pickles then this probably isn't the pan for you and you should get a stainless steel one. But for jam it is fantastic.

Useful kitchen item
Excellent Pan! Cooks fast, evenly and the most importantly the jem doesn't get burnt. It's important that the Pan should be washed very well and cleaned with vinegar and salt before use.

does not measure up to expectations
I bought this copper pan with expectations of higher heat transfer than my stainless steel pan. However for some reason it heats up much slower than stainless steel pan which is 4 times cheaper. I use ceramic hobs, so perhaps the reason could be not entirely flat surface which would impair heat transfer. In fact the low heat transfer on ceramic hob really makes this product unusable for me since its nearly impossible to achieve rolling boil. I use it only for apple butter making where slow boiling is needed. The pan looks beautiful, but nearly useless for me. Likely to work properly on gas stove

What can I say that has not already been said, well it's Mauviel, it's just not getting any better than that. Superb quality, and I am so thrilled that I've finally bought this.
