GF, good replacement for cuscus or corn grits
Added to my gf diet after ALCAT intolerance deemed it safe for me. Delicate flavor bit sweet and texture like couscus which I can't hav. I've used it many ways - as an adder to my chia seed fridge jam, let solidify (after making with extra liquid in my rice cooker) and fried sliced as one would polenta; tossed in some dry sour cherries/cinnamon/allspice/chia and stevia during cooking for a light dessert. No worries with this brand, helps eliminate corn and any rice which I'm supposed to avoid. Toss a cup or two into veg soups and use shiitake water for cooking liquid. I've always disliked idea of millet (saw as a nutritionally empty worthless bird food additive). Now, for my needs it's a neat useful harmless addition. Affordable too. Next experiment? Cook it up with cacao powder, bit of raw EVCO, stevia and cinnamon.

Excellent for baking and more
This is my go-to millet for all baking needs. It’s consistent in quality. Lately I’ve started sprinkling it on cereal for added crunch - delicious.

Crunchy Millet for Bread Making
This is a great deal. I love to make Beth Hensperger's "Hedgehog Bread." She has a terrific Bread Machine cookbook. Everybody loves the recipes. So that's how I use this millet. It's consistently good quality, dependably tasty and crunchy. I got 4 1 lb 12 oz bags for this fantastic price! It is clean--this is a yellow grain, earthy and natural--and clean.

Picky likes it!
I'll start by saying I do NOT like trying new foods. I like normal pasta (not whole grain), white rice, boring, boring foods. However, I have two very spoiled pet ducks. I wanted to add different grains to their diet since too much rice isn't good (even though they love their wild rice). I generally have to try new grains to prove that they're yummy. I wasn't too sure about trying this. I've never heard of millet as people food. I've only seen it in bird food mixes, and my wild birds aren't wild about it. Anyway, after cooking some of this up for my girls, I scooped myself a small bowl of it to show them that it was yummy. And boy oh boy, is sure is! I was very surprised. It has a nice crunch, a slightly nutty flavor and a texture similar to couscous. Now my girls quack at me with annoyance in their voices as I eat their yummy, yummy millet. If this extremely picky eater likes it, anyone will!

Strange texture
I had never tried millet so gave it a try. Cooked it in the instant pot, but the texture was strange. I didn’t care for it. I later learned that soaking it overnight made the texture better. I have not tried making flour from it yet, but will eventually.

Always Good!
Bob's Red Mill stuff never fails to please! This millet is no exception. I always rinse my millet before I use it (those little stones masquerading as millet can be tooth killers!) I am happy to say I have never found a stone when I have been using Red Mill Millet! Good stuff!!!!

Tasty
I always considered millet to be bird food, as that's how I had always seen it. Then I tried a mix of three grains that included millet, and despite the bird food smell, it was rather good. So I decided to give Bob's Red Mill (I like their products) version a try. I was pleasantly surprised with just how good this was! This did not have the strong bird food scent the previous product had, the texture is great, it has good flavor, and avoids the arsenic issue related with rice as well as the gluten of pasta. And the price is cheaper than other alternatives like quinoa. This stuff is the best of all worlds.

Great product and great price
Couldn't find millet in the stores. Was given a bag, by a friend, and our family fell in love with the taste and texture. Ordered more from Amazon, and was so happy that it was Bob's Red Mill. We trust Bob's. Love the taste and love that I could buy 4 packages of it for such an amazing price.
