Are these candies soft as they should be or are they as hard as rocks like some I've purchased locally?

They are soft at first, but over time they slightly harden but still soft enough to press flat. They have a crunchy and soft creamy texture. Almost like honey that has crystallized. One of the best candies I have had in my life. I have traveled the world and love food, this is my favorite sweets. The plain Carmel only one is.good to, a polish company makes them.

Are these gluten free?

Yes, I believe so, just as most similar products are gluten free. They don't do anything special to make these gluten free. It's just that the regular course of making them doesn't require any ingredients that have gluten.
