Retired pastry chef says this is the best
Ok this is one of maybe 2 reviews I’ve ever done on anything I’ve bought from amazon and trust me I have bought thousands worth of merchandise over 5 years. I am a 62 year old retired pastry chef. I owned my own bakery and am familiar with most commercial chocolates. My go to was always guittard chocolate. Good chocolate and reasonably priced. A fellow chef in the business recently told me about this chocolate and how he felt it was a step above the guittard and that I should try it. Omg, this chocolate is top notch. It melts evenly making it great for ganache, icings, glaze’s, sauces and candy making. The taste? Incredible. The first thing you taste is chocolate, not sugar. It melts in your mouth creamy, smooth and delicious. You know you’re experiencing a high end product. I cannot say enough about this amazing chocolate. I wish I had of taken pics of the goodies I’ve made for Xmas gifts with the chocolate however I plan on updating with pics next time I make something with Callebaut chocolate which will be soon.

Delicious Milk Chocolate
I have always liked Callebaut Milk Chocolate and had looked at the smaller sizes here on Amazon and thought they were a bit too expensive per pound. This is certainly more affordable but it is a lot of chocolate but I eventually caved and bought it. I broke it into 1 lb pieces and put them in ziploc bags in the freezer. Then I made some homemade chocolate candies, homemade reese's cups, fudge, chocolate pecan praline. Everything was very good and the chocolate not only tastes great but melts easy and smooth.

Yummmmmy, creamy, delicious!
Deeeeeeeeeeeeeeeeeeeeeeeelicous!!! We have been fans of Callebaut chocolate for years..it's the only block chocolate we buy and had stuck with 70% dark and occasionally the 55%. I had a hankering recently for milk chocolate and tried to quell it with Hershey's...ew...I think I have been too long away from Hershey's milk chocolate, it tasted like..weirdly sweet with half sour notes..annnnyways.....treated ourselves to this enormous MASSIVE, bloody hell that's a gorgeous bar, of milk chocolate just because we trust the brand. WONDERFUL! It is very sweet, as you'd expect with a milk chocolate but it has this rich almost caramel like back note...the thing that was missing from Hershey's stuff. Very pleased with this purchase. It melts very nicely in the mouth and satisfies all candy cravings ;) I like to have little chunks of it with raw almonds SO FRIGGING GOOD!

Great chocolate and a good price
I go through a lot of the Callebaut semisweet 811 and a fair amount of this. This comes in two drop and three drop versions. The three drop is more fluid when melted and is better for thin shells and coatings. This is two drop. When using it in molded chocolates it makes a thicker shell. (You can thin it with cocoa butter or mycryo). I use it in various chocolates but also eating plain. This is fairly soft so it is pretty easy to break up, but a chipper (I have not tried this brand but here is one: https://smile.amazon.com/Mrs-Andersons-Baking-Chocolate-Chipper/dp/B00005NUVX/ref=pd_sim_325_4?_encoding=UTF8&pd_rd_i=B00005NUVX&pd_rd_r=DY7FMVZYCAVRBTQ82903&pd_rd_w=BWlDQ&pd_rd_wg=qBvtH&psc=1&refRID=DY7FMVZYCAVRBTQ82903) makes it very easy to break into meltable (or snackable) size.

Best chocolate ever! Highly recommend!
This is the way to buy chocolate. Save some for nibbling and use the rest in recipes. This is rich, smooth, creamy, perfect balance of flavors and most importantly, not too sweet! Arrived in the heat of summer in a mylar foil bubble wrap with freeze packs tucked inside, all inside bubble packing to dampen transportation shock, all inside a sturdy cardboard box. Arrived in PERFECT condition! Amazing product, amazing delivery and service by Amazon.

a WONDERFUL experience from order to consumption AAAAAA+++ vendor
Hi all we're just two people in Chicago who think it's a blast to get a giant slab of chocolate to get us through all this Cv19 nonsense. The fine people at cacaohoilc.com are just the best. We order and within a few days it just appears. 11 pounds of belgian chocolate at a great price. When Blommer's shut their shop in Chicago we didn't know what we were going to do and then cacaoholic.com stepped up and saved us. We've ordered several times and each time it's like christmas.

Easy melting, medium flow
Overall, this chocolate melted very quickly and easily. With proper melting, the gloss on the final product was very good. Probably more of a winter chocolate--as a quick test, I made chocolate-covered strawberries. If I leave them out of the refrigerator in my mid-70 degree kitchen (hot summer this year), they start to melt/get too soft. I broke up the chocolate into 1 lb-ish (there is a 10-block pattern on the bar you receive, so each is approx 1.1 lb) blocks, vacuum-sealed them, and put all but 2.2 lbs into the freezer. At the price, the extra few minutes to do so was easy and well worth the cost. Where are you going to get decent chocolate at less than $8/lb? This will see me (and my kids) through baking for a while. Better than the Hershey's you typically find at the grocery store, and don't get me started on 'chocolate flavored' melting wafers. When we get through this 11 lb monster, we'll be buying again.
