What is the Kelvin rating of this bulb? Thank you.

Philips Model 455717 is 5000K and is in the listing. Its a constant battle to keep listings accurate as some sellers tweak the listings. We have even uploaded photos of the bulb, the packaging (what each bulbs package looks like - as each bulb is individually packaged) Also uploaded are the light output color spectrum, as well as the beam formation - data from Philips.

Can this bulb be used in an enclosed can light fixture with glass lens?

There's some conflicting information here, but LEDs will die much faster if it overheats. Yes, it will work, but it won't last anywhere near the rated number of hours. I know this from flashlights, some small 1x18650 powered flashlights can produce more lumens than this light bulb, but only for 30 seconds because it will overheat quickly (limited dissipation in a small flashlight). Many people have blown up their custom flashlights for this reason.

Looking at the lumens figures, do the "soft white" bulbs give as much actual light as a traditional 100w incandescent bulb or a 60w?

I can only speak for the 100W equivalent Philips bulb. We replaced the traditional incandescent 100W bulb in our typical lampshade lamps. My wife said she could see no difference between the actual light provided by the two bulb. However, when I replaced some of the bulbs in the recessed lighting in the kitchen (leaving some of the incandescent bulbs in for comparison) the Philips bulbs made the incandescent bulbs appear dim. LED lights are somewhat directional, in that most of their light is directed upward toward the top of the light bulb. Thus, this would explain why the bulbs in the recessed cans (which are screwed in upside down) outperformed the incandescent bulbs.

Is the Daylight brighter?

The Really, Really correct answer is that both answers are correct. Yes, technically speaking, both bulbs are the same brightness, which is measured in lumens. The 5000K bulbs will appear brighter (to humans at least) because the human eye is, for lack of a long explanation, generally more sensitive to the green area of the color spectrum, and the 5000K bulb's light output is closer to that area than is the 2700K bulb.
