What is the percentage of cocoa in the chocolate?

I am not sure. My mom got them. They were very rich and dark from what she said. She is very particular about dark chocolate.

Is there a map to tell you what each one is?

No map....that's what makes it special when you don't know what you are eating and it knocKS your socks off. Trust me you won't need a map. Every one of those truffles is incredible. Wouldnt you rather be surprised? Come on be honest. Lol.

How long will they stay fresh? Until Christmas?

These chocolates are Wonderful! As to how long they stay fresh that would depend on how long before you eat them. If you buy at T'giving then yes they'l be fine for Christmas.
