I really love making my own tortillas and this finer corn meal/ meseca type meal is my favorite brand for taste and function! It makes beautiful tortillas and corn muffins and even tamales-if I can find the time for homemade! It’s got a nice finer texture too and that really makes the difference I think! My invalid wife's caregiver is from Venezuela, and she introduced my wife and myself to the pleasure of eating arepas... it's a bit like an English muffin, but made from a special pre-cooked white corn meal flour, grilled on a griddle, and cut open and typically stuffed with scrambled eggs and cheese. The caregiver makes these every Tuesday for us, and it's a great treat. Of course, it helps to have the right flour... in fact, it's essential, and P.A.N. is what is needed. It's not easy to find in local supermarkets unless they cater to a significant Latin population... but it's very easy, and quite inexpensive, to order it from Amazon. I usually order 3 or 4 bags at a time, and fortunately, if I run out, it's often a next day delivery.
