Will these fit the hello kitty coleto pens or do I have to buy hello kitty refills and yes they sell them for an arm and a leg ?

Yes they will fit the hello kitty Coleto pens, but you should gently take off the decorative top and save them. That way if you want, you could swap the hello kitty tops and put them in these refills.

Is there a trick to getting the pen tips to stay down? As soon as i press down on the tip to write it goes back into the pen.

I haven't had this problem with my pen-- love these customizable multi ink pens, I have the clear 5 slot case/holder for them and I did notice that the first time I loaded the pens i did not slide them in correctly, there is a slot that is not obvious if just quickly placing the ink refills in. Hope that helps.

Will these refills rot the PenGems crystal pens?

Bought these and couldn't figure how to get them into my Coletto. I've never heard of putting them into PenGems. But what makes you think they would "rot" in any pen? Just curious.
