Great recipe!
First time using A.C. Legg seasoning, made 25 pounds with half 80/20 beef and half pork shoulder. Fine ground and mixed with according to package instructions. I did add the optional 3oz of encapsulated citric acid to the meat and mixed for 1 min using a meat mixer that attaches to the gringer. Stuffed into 21mm natural casings and smoked on the pellet grill at 180-200 deg until internal temp of 155. Taste is amazing and just as good as the best store bought product. Will be using this and other A.C. Legg mixes in the future, this is at the top of the batches I've made thanks to this product, very good!

Butcher quality taste. Apply the right process and these meat sticks are awesome!
Make these correctly and you will not be disappointed. The only negative comment I received from all of my friends is that they weren't spicy enough. I lied to all of them and said I had them made by a mail order butcher. EVERYONE asked me for the contact info. This seasoning when applied to your correct fat % meat mix in "by weight" quantity makes a perfect, not too spicy but delicious for everyone (even my kids) to eat. You will run out of these very quickly so consider doing a 50lb batch. I used 19mm collagen casings and smoked them low temp until internal was 150f. Awesome taste. Awesome product!!

Makes a Great Snack Stick
I tried this because the reviews were generally good and I really feel like I got lucky with that decision. I was going to try to come up with my own "mix", but thought that I should try a pre-made one. I'm very satisfied with this and will be using it on my next batch. If you check out the other reviews - one person says it's not salty enough ... another says it's too salty! It's all about what your taste buds tell you.I am going to experiment with using this for a 30# batch - it was just a bit saltier than I would have liked. I'll see how that goes and then I'll have my own "rate" to go by. Some reviews also suggested some red pepper for some heat - great idea if that's what you like. I like various things a bit "hot", but I prefer my snack sticks to be flavorful, but I don't care for any "heat".One warning - Somewhere (the label or maybe the A.C. Legg website) it says to use 7 TBS/5# if you are not going to make a full 25# batch. I found that to be way off – it is too little! It should be 11 ½ TBS/5# The best way to do it is to have a small and accurate scale and do it by weight, but the 11½ TBS/5# is correct too.

Not my flavor
Product was packaged well and as described. It just tastes really salty to me and it’s not my favorite. If you like salt you will love this mix but my son and I will not buy again.

Great flavor
I usually make the Leggs smoked cracked pepper flavor, but this year I incorporated 20 pounds of the snack sticks. I have to say it’s hard for me to choose one flavor over the other as they are both excellent. I grind well trimmed venison with pork shoulder and a little smoked bacon to get a perfect balance. The ratio should be about 70% venison, 25% pork shoulder and 5% nice fatty bacon.
