Is this have a lot of heat to it?

It can vary quite a bit from very hot to barely hot at all, depending on several factors such as the growing conditions, time of harvest, the way it was processed, etc. Even the very hot ones though you can prepare the Peruvian way which is to saute the panca pepper puree en a few table spoons of oil over a medium heat for 5 to 10 minutes until the oil separates from the reduced pepper puree which will become a bit clumpy and much more dry. That processes out nearly all of the "hotness" of the pepper but preserves the flavor. Same goes for the other variety of Peruvian hot peppers.

Which of these inca’s pastes would be best for a “tex-mex” flavor? I have a recipe that calls for a “tex mex paste”.

In order to get Tex-Mex flavor in a dish , jalapeño, tomato, onion,garlic, cilantro and lime would be the the main ingredients to obtain that distinctive taste. The Inca paste is for Peruvian dishes. Bon appetite!

If you mean is it hot, yes. If you mean does it include an array of diced, no. This paste is made from Peruvian peppers. It is not "breathtaking" in it's heat, but a staple of the national cuisine.
